Bob Newhart’s Carrot Mold

Bob Newhart is an actor and a stand up comedian. If you are of the younger generation you may remember him from his small part as Professor Proton on Big Bang Theory or in the movie Elf. Others may remember him from the 1970s television show The Bob Newhart Show or his 1980s show Newhart. Though it is his deadpan comedy stylings in the 1960s and the comedy albums he recorded that first helped him rise in popularity. He also called the late comedian Don Rickles his best friend.

This is his recipe for a carrot mold.  Well to be perfectly clear this is actually his wife Ginnie’s recipe. It is a very easy recipe that takes only a few minutes to come together. Despite what the name suggests, there is no gelatin in this recipe. Rather, it is a thick batter that is baked in a ring mold that has the texture of a corn pudding. The Newhart’s finished this dish by putting peas in the center but you could update it with some lightly dressed mixed greens. Ginny Newhart said that she would “usually make 3 or 4 of these, one to use and the others to freeze. My family loves it.” She also says that pairs well with chicken, beef or fish.

Bob Newhart's wife Ginny's Carrot Mold!

Ingredients

  • 1 1/2 cups carrot, grated
  • 1 cup flour
  • 1 cup brown sugar
  • 1/2 cup soft margarine
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 egg, beat
  • 2 cups cooked green peas

Directions

  1. Preheat the oven at 350 and grease a 5 1/2 cup ring mold.
  2. In a large mixing bowl, combine all the ingredients and mix well.
  3. Bake in the oven for 45 minutes.
  4. Let cool to touch then unmold onto a platter.
  5. Place the cooked green peas in the center and serve.
