Pamela Mason was a British-born actress who starred appeared in both British and American movies most often under the name Pamela Kellino. Many of these films were with her husband at the time James Mason such as I Met A Murderer, The Upturned Glass, and Lady Possessed. She also did some screenwriting as well as wrote a handful of books. Pamela Mason made several appearances on Groucho Marx’s game show You Bet Your Life as well has had her own talk show called The Pam Mason Show that ran from 1965 – 1966. In another installment of interesting things I learned from Wikipedia: Pamela Mason also was known for having quite a high profile divorce from James Mason where despite her known infidelities, she came away very favorably. The media at the time called it “America’s first million dollar divorce”.
This is her recipe for a bean salad. It is essentially her take on a three-bean salad. If you are curious about the history, I have already written about it here and that includes another variation on the recipe as well. In case one was not aware of what a three-bean salad is, it is a mixture of canned kidney beans, green beans, and wax beans that has been marinated. It was and still is a popular side dish during the summer as it contains no mayo that can spoil in the heat. Just like I said in my History of Three Bean Salad recipe, this is an easy recipe to make to your own taste. Try a different vinegar, add in some spice, use less onions or use honey or agave instead of sugar. The options are almost limitless.
Pamela Mason's Bean Salad
Actress Pamela Mason's version of the ever popular three bean salad!
Ingredients
- 2/3 cup vegetable oil
- 1/3 cup sugar
- 3/4 cup white vinegar
- 1/4 cup water
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 15 oz can kidney beans, drained and rinsed
- 1 15 oz can green beans, drained
- 1 15 oz can wax beans, drained
- 1/2 cup celery, chopped
- 1/4 cup green pepper, chopped
- 1 cup chopped onion.
Directions
- In a large mixing bowl, mix the oil, sugar, vinegar, water, salt and pepper together.
- Stir in the rest of the ingredients.
- Cover and place in the refrigerator to marinate for at least an hour, preferably overnight.
