Rose Marie’s Dream Cake

Rose Marie is without a doubt most known for playing Sally Rogers on the Dick Van Dyke Show but in her long career, she was doing so much more from singing, acting to comedy. I just found out that she started her career at five years old in 1929 as a child singer called Baby Rose Marie. In the 1950s and beyond, she appeared in many popular TV shows such as The Doris Day Show, The Monkees, The Dean Martin Show, and Murphy Brown. Rose Marie was also a regular guest on the popular game show The Hollywood Squares.

This is her recipe for a dessert she calls Dream Cake. I would argue that these would fall under the category of bars, not cake but we will let it slide. This recipe starts with a shortbread-type crust that is topped with a batter chock full of coconut and walnuts. Honestly, if you love coconut, these may be the dessert for you.

Rose Marie's Dream Cake

An easy bar recipe from actress Rose Marie.

Ingredients

  • 1/2 cup shortening
  • 1/2 cup soften butter
  • 1/2 cup brown sugar
  • 2 cups flour
  • 1/4 teaspoon salt
  • 4 eggs
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 cups chopped walnuts
  • 2 2/3 cups coconut flakes

Directions

  1. Preheat the oven to 350 degrees.
  2. Combine together the shortening, butter, brown sugar, flour, and salt and press into an ungreased 9×13 baking dish. Bake for 15 minutes.
  3. While the crust bakes, beat the eggs a few until they are well beaten and frothy. Then keep beating them while slowly adding in the sugar until they have thickened and turned a light lemon color. Mix in the vanilla.
  4. Fold in the walnuts and coconut flakes.
  5. Pour the coconut mixture on top of the crust and bake for an additional 25 minutes.
  6. Let cool and cut into 2 inch squares (or whatever size you feel like).
